What’s better, copper or plastic water line?

The standard in water line is copper, always has been, but it is expensive and generally used in commercial applications and premium installations. Plastic water line is far more common and with the advances in pipe composition, almost as durable.

I am not getting enough water pressure from my Well

Well water pressure can be indicative of a number of issues but a simple check is to ensure your pressure tank is properly charged. The tank pressure should be 2PSI below your pump cut-in pressure setting. For example, if your pump cuts in at 30PSI, your tank should be charged at 28PSI, if it cuts in at 40PSI then it should be set at 38PSI. The pump cut-in pressure can be determined by running your water and watching your gauge (hence the importance of a good quality gauge). It should cut in and out in 20PSI intervals.
